Good product meets my expectations

The history of this sauce is that there was drama with the original pepper supplier that led to a shortage. This sauce uses different peppers. The difference is a redder color and inconsistency with the heat.My last batch of this newer sauce was milder than what I remember. My last batch the heat was right back up where I love it. This sucks, but the owner decided to go cheap and fight back over the local farmers increase in pepper prices. I wish they hadn’t split, because they’re better together, but it is what it is.How does this compare to the dragon (farmer’s) siracha answer?Heat: Expect the heat to vary. My first batch was more mild and was on par with the heat to the dragon brand. This last batch was hot like I remember and beats the dragon on heat.Why will heat vary? Pepper heat is impacted by other peppers that are growing next to them. If they grow next to habaneros the jalapeños will be hotter than if growing next to bell peppers. With the Rooster owner going to Mexico for peppers and using a number of different suppliers, there’s going to be variances in heat.Flavor: The old siracha is not the same with heat, but the flavor is the same. The Dragon answer is a substitute if there were another shortage but lacks the depth the Original has.Pricing: Affordable compared to “upscale” brands I tried, including the dragon. The days of $25 to $50 a bottle should be over and this is priced about what it used to cost.
