Fire roasted chiles from Hatch
We often buy diced chiles around this time of year when finding fresh chiles around the house gets tougher but Hatch's chiles were a good tasting chile with a slight smoke flavor. The heat level wasn't too strong more like a medium heat level but it delivered on the taste.

EXCELLENT PRODUCT...
I love Hatch green chilies, the price isn't too bad, it would be better in a 12 pack or a 15 pack. I would like to see Hatch do diced habanero peppers... basically the exact same thing as the green chilies, but using habanero peppers.

Not what I expected
Flavor was nice, but no "heat" to the product. As one that has lived in New Mexico I know what hot is all about and these just don't come close.

The real deal
These are from the famous Hatch green chiles. They aren't as good canned as they are frozen or freshly roasted, but they are much better than the supermarket canned green chiles. I use them sparingly as they are a bit pricey, but they are worth it.

Good stuff – beats the pants off other canned brands
If you're used to Ortega and other canned brands (which are mostly made with Anaheim peppers), this real New Mexico green chile will be a treat. If you're already a connoisseur of GC, you'll probably find this still a bit toward the milder side (compared to the hottest NM green chile, though pretty much all of it is less spicy than jalapeño or serrano). Still, it is much better than any other canned offerings. If you can afford it and have the freezer room, it is best to get a high-end selection (Big Jim cultivar FTW!) dropped-shipped to you during roasting season. For long-term and convenient storage, though, this is a good bet. If you're new to proper GC, try it on a cheese burger and on a pizza and in some scrabbled eggs, not just in Mexican food. In NM, it gets used on pretty much everything but dessert.

I love Hatch Green Chilies
It's so great to be able to find Hatch green chilies on Amazon. After living in New Mexico for years and moving to the east coast I miss New Mexico's culture, especially the food. I use these chilies in several ways. They are great on hamburgers, in chilie with meat and beans, in omelets...... even on steaks..... Just mix with chopped inion, little olive oil in the pan and sauté add some grated white cheddar and serve on steaks, potatoes or anything....soo good!
